🥑 Avocado Toast with Poached Egg 🍳

Ingredients:

  • 1 slice of whole grain or sourdough bread

  • 1 ripe avocado

  • 1 egg

  • 1 tsp white vinegar (for poaching)

  • Salt & pepper to taste

  • Optional toppings: red pepper flakes, lemon juice, microgreens, cherry tomatoes, feta, everything bagel seasoning

Instructions:

  1. Toast the Bread:
    Toast your bread slice until golden and crispy.

  2. Mash the Avocado:
    In a bowl, mash the avocado with a fork. Add a pinch of salt, pepper, and a squeeze of lemon juice if desired.

  3. Poach the Egg:

    • Bring a small pot of water to a gentle simmer (not a rolling boil).

    • Add vinegar to the water (helps the egg white hold together).

    • Crack the egg into a small bowl.

    • Swirl the water gently, then slide the egg in.

    • Cook for 3–4 minutes, or until the white is set but yolk is still runny.

    • Remove with a slotted spoon and pat dry gently with a paper towel.

  4. Assemble the Toast:
    Spread mashed avocado over the toasted bread. Place the poached egg on top.

  5. Season & Serve:
    Sprinkle with salt, pepper, and optional toppings like red pepper flakes or microgreens. Serve immediately!

  • Use a very fresh egg for best poaching results.
