🥑 Avocado Toast with Poached Egg 🍳

Ingredients:

1 slice of whole grain or sourdough bread

1 ripe avocado

1 egg
-
1 tsp white vinegar (for poaching)

Salt & pepper to taste

Optional toppings: red pepper flakes, lemon juice, microgreens, cherry tomatoes, feta, everything bagel seasoning
Instructions:

Toast the Bread:
Toast your bread slice until golden and crispy. -
Mash the Avocado:
In a bowl, mash the avocado with a fork. Add a pinch of salt, pepper, and a squeeze of lemon juice if desired. -
Poach the Egg:

Bring a small pot of water to a gentle simmer (not a rolling boil).

Add vinegar to the water (helps the egg white hold together).

Crack the egg into a small bowl.

Swirl the water gently, then slide the egg in.

Cook for 3–4 minutes, or until the white is set but yolk is still runny.

Remove with a slotted spoon and pat dry gently with a paper towel.
