🥗 Nourishing Avocado Chickpea Power Salad

Ingredients:

  • 1 ripe avocado, diced

  • 1 cup canned chickpeas, drained & rinsed

  • 1 cup cherry tomatoes, halved

  • ½ cucumber, sliced

  • ¼ red onion, thinly sliced

  • 2 handfuls fresh spinach or mixed greens

  • 2 tbsp olive oil

  • 1 tbsp lemon juice (or apple cider vinegar)

  • Salt & pepper to taste

  • Optional: crumbled feta or a sprinkle of hemp seeds for added protein


Instructions:

  1. In a large bowl, combine chickpeas, avocado, tomatoes, cucumber, and onion.

  2. Add your leafy greens and gently toss everything together.

  3. Drizzle with olive oil and lemon juice.

  4. Season with salt and pepper, then toss again until evenly coated.

  5. Top with feta or hemp seeds if using, and serve fresh.
