🍝 Skinny Zucchini Pasta with Creamy Avocado Sauce

Perfect for: low-cal, low-carb, plant-powered weight loss meals!


Ingredients:

  • 2 medium zucchinis, spiralized (or buy pre-spiralized zoodles)

  • 1 ripe avocado

  • 1 clove garlic

  • Juice of ½ lemon

  • 2 tbsp plain Greek yogurt (or dairy-free alternative)

  • A handful of fresh basil

  • Salt & pepper to taste

  • 1 tbsp olive oil

  • Optional: cherry tomatoes, grilled chicken, or toasted pine nuts


Instructions:

  1. Make the sauce: In a blender, combine avocado, garlic, lemon juice, yogurt, basil, salt, and pepper. Blend until smooth and creamy.

  2. Cook the zoodles: Heat olive oil in a pan over medium heat. Sauté the zucchini noodles for 2–3 minutes until just tender (don’t overcook!).

  3. Combine: Remove zoodles from heat and toss with the creamy avocado sauce.

  4. Serve: Top with optional add-ins like cherry tomatoes or grilled chicken for protein.
