🍝 Skinny Zucchini Pasta with Creamy Avocado Sauce
Perfect for: low-cal, low-carb, plant-powered weight loss meals!
Ingredients:

2 medium zucchinis, spiralized (or buy pre-spiralized zoodles)

1 ripe avocado

1 clove garlic

Juice of ½ lemon

2 tbsp plain Greek yogurt (or dairy-free alternative)

A handful of fresh basil

Salt & pepper to taste

1 tbsp olive oil

Optional: cherry tomatoes, grilled chicken, or toasted pine nuts
Instructions:

Make the sauce: In a blender, combine avocado, garlic, lemon juice, yogurt, basil, salt, and pepper. Blend until smooth and creamy.

Cook the zoodles: Heat olive oil in a pan over medium heat. Sauté the zucchini noodles for 2–3 minutes until just tender (don’t overcook!).

Combine: Remove zoodles from heat and toss with the creamy avocado sauce.
