🧑‍🍳 Ingredients (Serves 2):

For the cod:

  • 2 cod fillets (approx. 5 oz each)

  • 1 tbsp olive oil

  • Salt & pepper to taste

  • 1 tbsp green pesto or fresh herb paste

For the vegetables:

  • 10–12 baby potatoes, scrubbed clean

  • 6 radishes, halved or quartered

  • 1 tsp olive oil

  • Salt to taste

For the herb sauce:

  • 1 cup fresh parsley

  • ½ cup basil leaves

  • 1 clove garlic

  • Juice of ½ lemon

  • ¼ cup olive oil

  • Salt & pepper to taste

For the egg:

  • 2 eggs

  • Ice bath for cooling

🍳 Instructions:

1. Prep the Potatoes and Radishes:

Boil the baby potatoes in salted water for 12–15 minutes until tender. Add radishes in the last 3 minutes. Drain and set aside.

2. Make the Herb Sauce:

Blend parsley, basil, garlic, lemon juice, olive oil, and a pinch of salt and pepper until smooth. Set aside.

3. Cook the Cod:

Pat the cod fillets dry. Rub with olive oil, salt, pepper, and herb paste or pesto. Sear in a hot skillet for 3–4 minutes per side, until golden.

4. Soft-Boil the Eggs:

Place eggs in boiling water for exactly 6 minutes. Then, cool in an ice bath for 2 minutes. Gently peel.

5. Assemble the Plate:

Spread herb sauce on the plate. Add cod, potatoes, and radishes. Slice the soft-boiled egg for a golden yolk effect.
